The centrailty of improvisation in jazz is atributed to its presence in influential earlier forms of music: the early blues, a form of folk music which arose in part from the work songs and field hollers of the African-American workers on plantations. There were commonly structured around a repetive call-and-response pattern, but early blues was also highly improvisational.------ From Wikipedia.

Playing Jazz is somewhat like singing songs in the ethnic minorities. You don't have to obey the music books, just show how you feel in the moment; whereas the other genres of music, you have to follow the stave, you are expected to show a certain feeling that was agreed by many masters, especially in classic music. Any adaption will be regraded as special and new.

It occurs to me that you can try to listen some new age piano music, which might give you some clue.
